This recipe covers beef and vegetarian versions.
For those for whom the soy is not suitable, simply substitute ground bison (or beefalo or beef) for the soy.
So, if you don't want the soy, make this instead with ground meat, preferably from animals raised on grass without antibiotics.
Use beefalo, bison, or beef

More about this recipe
Using this picadillo recipe is a way to be kind to yourself (and loved ones).
For all the benefits to civilization provided by the First Agricultural Revolution, it has proved to be deleterious to our health. Our prehistoric, foraging ancestors did not evolve eating foods such as grains, potatoes, and legumes.
Today those foods provide more calories for humans than any other foods! The result is the epidemic of the diseases of civilization such as coronary heart disease, which is the biggest killer, as well as type 2 diabetes, high blood pressure, obesity, and others.
These diseases cause great suffering and many premature deaths -- and that is avoidable simply by eating and moving in ways that our bodies have been designed by nature to eat and move!
So, unless it is for a cheat meal, please be careful about putting picadillo on rice, buns, or other unnatural foods.
